Imagine soft, warm corn tortillas filled with fluffy scrambled eggs or a perfectly jammy fried egg, topped generously with sharp cheddar cheese, creamy avocado, fresh pico de gallo, vibrant cilantro, and a splash of hot sauce. Quick to assemble yet endlessly customizable, breakfast tacos are ideal for leisurely solo mornings or lively brunches with friends.
Breakfast tacos invite creativity and flexibility into your kitchen. Whether you prefer a vegetarian version bursting with sautéed bell peppers and onions or a hearty taco featuring crispy bacon or chorizo, the possibilities are endless. Perhaps you're drawn to sweet and savory combinations, adding caramelized onions or roasted sweet potatoes. All you need is a hot skillet, some simple ingredients, and your favorite playlist. Ingredients:
your favorite style of eggs: I usually scramble them or love a jammy sunny side up egg
pico de gallo (recipe linked)
your favorite hot sauce (I used Cholula)
finely chopped cilantro and green onions
crumbled or grated cheese of your liking, I used sharp cheddar
guacamole (store bought is just fine)
tortillas (either corn or flour)
Instructions:
Prep your eggs to your liking. I add in a little green onion ends, cilantro, and garlic powder to my scrambled eggs to add in a little extra flavor and if I'm frying up eggs I do it in some chili garlic oil.
Heat up your tortillas in a pan or over the flame if you have a gas stove. I find doing it over an open flame add an extra smoky flavor to the tortillas.
To assemble add some guacamole onto the tortillas, eggs, pico, cheese, hot sauce, and cilantro and green onions. Fold over and enjoy!
These are the most customizable breakfast and so easy to put together. Don't like eggs? Here's a vegan version that I also love putting together when I have a little extra time on hand. Want some extra protein in there, add in a protein of your choice (I love adding in vegan chorizo). I also love making an Indian fusion smashed taco version with a paneer and potato. Delicious, inviting, and endlessly customizable.
