ingredients
2 cups pitted and roughly chopped medjool dates
1/2 cup chopped pistachio
3 tsp ghee or vegan ghee
2 tablespoons dried coconut, I prefer unsweetened but you can use sweetened as well
1/4 - 1/2 tsp cardamom powder
1 tsp crushed dried edible rose petals
instructions
Pit and chop the dates.
Roast the pistachios over low flame and chop into smaller pieces.
Melt the ghee in a saucepan, add the dates and sauté about 5 minutes on a low heat. The dates will soften up and turn into a paste of sort.
Add in pistachio and cardamom and mix well.
Remove the pan from the heat and let the mixture cool until it’s easy enough to handle. Make sure it’s still warm not too cool because it will harden as it cools.
Roll it into a log shape, coat them with coconut & rose petals. Wrap with Saran Wrap or parchment paper and leave it in the freezer for about 10-15 minutes or until it hardens slightly.
Remove the covering and cut them into 1/4 inch discs.
