Ingredients:

1 bag Daring Buffalo Plant Chicken Wings

4 tbsp Frank’s Original Red Hot Sauce

1 tbsp vegan butter, melted + more for toasting the bread

1/2 tsp coconut sugar (or brown sugar)

3 Trader Joe's Everything Ciabatta Rolls

1/3 cup fresh pineapple, cubed

2 - 3 gherkins, cubed

1 cup coleslaw mix

1/4 cup vegan mayo

1/2 tsp garlic powder

salt to taste

1/4 tsp coconut sugar for the coleslaw

3 tbsp chimichurri sauce


Directions:

To a bowl add the Frank's red hot, vegan butter, coconut sugar, and mix until all the sugar is dissolved. Cook the vegan chicken as per the package instructions, add to the bowl, and toss in the sauce.

In another bowl add in the chopped pineapples and gherkins and set aside.

For your coleslaw, add in the pre-packaged coleslaw mix, mayo, garlic powder, salt, and coconut sugar. Toss well and set aside for about 5-6 minutes.

If you don't need the sandwich to be vegan, add in 2 tbsp crumbled blue cheese into the coleslaw.

Brush your ciabatta rolls with butter and toast until golden brown in the inside.



To assemble spread the toasted ciabatta roll with chimichurri sauce, add in the coleslaw, layer the dressed buffalo chicken, top with the pineapple gherkin mixture and close the sandwich with the other half of the roll. Enjoy this with a cold glass of your favorite beer or fizzy drink.
